Shrimp Carlos Recipe
Description: 🦐 A scrumptuous appetizer from Mexico with a few American alterations served by the son of a very special lady on her 89th birthday party. Scott spent a lot of time in Mexico and found this to be one of his favorites and now mine too! I think it’ll become one of yours as well.

Instructions:

Fry Bacon: Begin by frying the bacon until it’s still limp but partially cooked. 
- 
Prepare Baking Sheet: Preheat your oven and line a jelly roll sheet or a cookie sheet with sides. 
- 
Layer Bacon and Shrimp: Place 12 half slices of bacon evenly spaced on the prepared baking sheet. On top of each bacon slice, place an uncooked shrimp. 
- 
Add Onions: Next, add a ring of red onion on top of each shrimp. 
- 
Top with Cheese: Place a slice of Monterey Jack pepper cheese (or cheddar if you prefer) on each shrimp and onion stack. 
- 
Season: Sprinkle garlic powder over the shrimp stacks according to your taste preferences. 
- 
Wrap and Secure: Carefully wrap each bacon slice around the shrimp, cheese, and onion stack, securing it with a toothpick to hold everything together. 
- 
Add Hot Sauce: Sprinkle a couple of drops of Tabasco sauce over each shrimp stack for an added kick. 
- 
Broil: Preheat your oven’s broiler and place the baking sheet on the top rack. Broil the shrimp stacks for about 3 minutes or until the shrimp are cooked through and the bacon is crispy. 
- 
Serve: Once done, remove from the oven and serve immediately while hot.
