Baked Sedanini with Broccoli, Mushrooms, and Cheese

Category: Pasta Dishes
Servings: 6

Ingredients:

Ingredient Quantity
Sedanini Rigati (Pasta) 500g
Broccoli 300g
Champignon Mushrooms 200g
Leek 1
Cooked Ham (Prosciutto Cotto) 180g
Pecorino Cheese 65g
Caciocavallo Cheese 60g
Ricotta Cheese 200g
White Wine 150g
Extra Virgin Olive Oil q.b. (to taste)
Black Pepper q.b. (to taste)
Fine Salt q.b. (to taste)

Instructions:

  1. Prepare the Ingredients:

    • Begin by slicing the cooked ham into half-centimeter thick slices. Then, cut these into small cubes.
    • Cut the broccoli into small florets and set aside.
    • Clean and slice the champignon mushrooms.
  2. Sauté the Vegetables:

    • In a large oven-safe pot, heat a drizzle of olive oil over medium heat.
    • Slice the leek and add it to the pot, sautéing for a few moments until it softens.
    • Add the broccoli and mushrooms to the pot, stirring occasionally.
  3. Season and Cook:

    • Once the vegetables are slightly browned, season with salt to taste.
    • Pour in the white wine and allow it to cook off, stirring to combine with the vegetables.
  4. Cook the Pasta:

    • Meanwhile, cook the sedanini rigati in boiling salted water until al dente. Drain the pasta, reserving a cup of pasta cooking water.
  5. Combine Pasta and Sauce:

    • Add the cooked pasta directly into the pot with the vegetables. Stir gently.
    • Add the ricotta cheese and a ladle of the pasta cooking water, mixing until a creamy consistency forms.
  6. Add the Cheeses:

    • Stir in the grated caciocavallo and pecorino cheese. Adjust the texture if needed with a bit more pasta water.
  7. Transfer to the Oven:

    • Drizzle a little more olive oil over the pasta and vegetables, but do not stir.
    • Preheat your oven to 200°C (392°F) in static mode. Place the pot in the oven and bake for around 25 minutes, or until the top is golden and the dish is bubbling.
  8. Final Touch:

    • Once baked, grate some fresh black pepper over the top and serve your baked sedanini piping hot.
