Ingredients

  • 4 portabella mushrooms
  • 3 tbsp olive oil (divided)
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 2/3 cup fresh basil, chopped
  • 3 tbsp dried basil
  • 2/3 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup fresh Parmesan cheese, grated
  • Salt, to taste

Instructions

Step Instruction
1. Preheat oven to 400°F (200°C).
2. Lightly oil a baking dish.
3. Wipe or brush any soil off the mushrooms. Remove the stems and discard or save for making mushroom broth or veggie stock. Rinse caps and pat dry with a towel.
4. In a skillet, warm 2 tablespoons of olive oil over medium heat. Saute the diced onions for about 5 minutes, or until they begin to soften.
5. Add minced garlic and diced red bell pepper to the skillet. Saute for an additional 5 minutes until vegetables are tender. Remove from heat and set aside.
6. In a mixing bowl, combine chopped fresh basil, dried basil, ricotta cheese, shredded mozzarella cheese, grated Parmesan cheese, and salt to taste. Mix well.
7. Stir the sauteed vegetables into the cheese mixture until evenly combined.
8. Brush the portabella mushroom caps with the remaining 1 tablespoon of olive oil and place them gill side up in the prepared baking dish.
9. Divide the cheese and vegetable mixture evenly among the mushroom caps, spreading it over each cap.
10. Bake uncovered for 20 to 25 minutes in the preheated oven, or until the mushrooms release their juices and the cheese is melted and bubbly.
11. Serve the Italian stuffed portabellas hot, optionally over pasta with tomato sauce or as a standalone dish. Enjoy!
