- 2/3 cup fresh basil, chopped
- 3 tbsp dried basil
- 2/3 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/4 cup fresh Parmesan cheese, grated

Instructions
| Step | Instruction |
|---|---|
| 1. | Preheat oven to 400°F (200°C). |
| 2. | Lightly oil a baking dish. |
| 3. | Wipe or brush any soil off the mushrooms. Remove the stems and discard or save for making mushroom broth or veggie stock. Rinse caps and pat dry with a towel. |
| 4. | In a skillet, warm 2 tablespoons of olive oil over medium heat. Saute the diced onions for about 5 minutes, or until they begin to soften. |
| 5. | Add minced garlic and diced red bell pepper to the skillet. Saute for an additional 5 minutes until vegetables are tender. Remove from heat and set aside. |
| 6. | In a mixing bowl, combine chopped fresh basil, dried basil, ricotta cheese, shredded mozzarella cheese, grated Parmesan cheese, and salt to taste. Mix well. |
| 7. | Stir the sauteed vegetables into the cheese mixture until evenly combined. |
| 8. | Brush the portabella mushroom caps with the remaining 1 tablespoon of olive oil and place them gill side up in the prepared baking dish. |
| 9. | Divide the cheese and vegetable mixture evenly among the mushroom caps, spreading it over each cap. |
| 10. | Bake uncovered for 20 to 25 minutes in the preheated oven, or until the mushrooms release their juices and the cheese is melted and bubbly. |
| 11. | Serve the Italian stuffed portabellas hot, optionally over pasta with tomato sauce or as a standalone dish. Enjoy! |
