Ingredients:
- 2 lbs lean ground beef
- 1 large onion, diced
- 2 cups tomato sauce
- 1 tablespoon chili powder
- 1 teaspoon dried oregano

- 1/4 cup corn, drained
- 1 (10 oz) can enchilada sauce
- 12 corn tortillas
- 1 cup shredded cheddar cheese
Instructions:
- Preheat oven: Preheat your oven to 375°F (190°C).
- Cook beef and onion: In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and crumbled. Drain any excess grease and return the mixture to the skillet.
- Add seasonings: Stir in the tomato sauce, drained corn, enchilada sauce, chili powder, dried oregano, black pepper, and salt into the beef mixture. Allow it to cook and bring to a gentle boil.
- Simmer: Reduce the heat to medium and let the mixture simmer uncovered for about 5 minutes, stirring occasionally.
- Layer tortillas: Meanwhile, grease a 13×9-inch baking dish. Arrange half of the corn tortillas on the bottom of the dish.

- Repeat layers: Create another layer using the remaining tortillas and beef mixture.
- Bake: Place the assembled casserole in the preheated oven and bake for 10 minutes.
- Add cheese: After 10 minutes, remove the casserole from the oven and sprinkle the remaining shredded cheddar cheese over the top. Return it to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
- Serve: Once done, allow the enchilada casserole to cool slightly before serving. Garnish with your favorite toppings such as diced tomatoes, avocado slices, sour cream, or chopped cilantro, if desired.
