Brussels Sprouts Gratin Recipe

Category: Side Dishes
Servings: 4

Ingredients

Ingredient Quantity
Brussels sprouts 750g
Light beer 66g
Gruyère cheese 300g
White onions 200g
Extra virgin olive oil 40g
Butter 40g
Salt to taste
Black pepper to taste
Chives to taste

Instructions

  1. Prepare the Brussels Sprouts
Begin by trimming the Brussels sprouts. Use a knife to remove the stems and any damaged outer leaves. Rinse them thoroughly under cold water to clean.

  2. Cook the Brussels Sprouts
Fill a saucepan with water and bring it to a boil. Once boiling, add the Brussels sprouts and cook them for around 10-15 minutes, until tender. Drain and set aside.

  3. Sauté the Onions
In a non-stick skillet, heat the olive oil over medium heat. Add the white onions and sauté until they become soft and translucent. Season with salt to taste.

  4. Add the Beer and Simmer
Pour the light beer into the pan, a little at a time, letting it evaporate gently. Stir occasionally, allowing the beer to cook off while the Brussels sprouts and onions continue to stew together over medium-low heat. Let the mixture simmer until most of the liquid has evaporated, but it should not be dry.

  5. Prepare the Baking Dish
Butter a baking dish generously. Then, add the cooked Brussels sprouts to the dish, spreading them out evenly.

  6. Grate the Gruyère
Using a grater with large holes, grate the Gruyère cheese. Sprinkle it generously over the Brussels sprouts, making sure they are well-covered with cheese.

  7. Gratin the Brussels Sprouts
Place the dish in the oven and bake at 180°C (350°F) for about 10-15 minutes, or until the cheese is golden brown and bubbling.

  8. Finish with Chives
Once out of the oven, garnish the gratin with freshly chopped chives. This adds a lovely fresh flavor that complements the rich cheese.

  9. Serve and Enjoy
Serve the Brussels sprouts gratin as a delicious and hearty side dish for any meal. Enjoy the perfect balance of tender sprouts, savory cheese, and aromatic herbs!

This Brussels sprouts gratin is an excellent choice for anyone looking for a flavorful side dish with a rich texture and a touch of elegance. The combination of Gruyère cheese, beer, and onions creates a comforting and flavorful dish that pairs beautifully with roasted meats or a fresh salad.
