Description: My friend Cathy brought this to a get-together and it tastes so good. Something different from the usual fare we have. Everyone enjoyed it, and I bummed the recipe to share with you all.

Instructions:

Saute Onion: In a skillet, melt the butter over medium heat. Add the chopped onion and sauté until translucent. Remove from heat.

Mix Ingredients: In a large mixing bowl, combine the cooked rice, sour cream, cottage cheese, bay leaf, salt, pepper, and the sautéed onion. Stir well to ensure all ingredients are evenly mixed.

Prepare Baking Dish: Preheat your oven to 375°F (190°C). Spray or lightly butter a 9×13-inch baking dish to prevent sticking.

Layering: Spread half of the rice mixture evenly in the prepared baking dish. Top with half of the chopped green chilies, and then sprinkle half of the sharp cheddar cheese over the chilies.

Repeat Layers: Repeat the layers by adding the remaining rice mixture, green chilies, and sharp cheddar cheese on top.

Bake: Place the assembled casserole in the preheated oven and bake, uncovered, for about 35 minutes, or until the cheese is melted and bubbly, and the casserole is heated through.

Garnish: Once done, remove the casserole from the oven and sprinkle the top with freshly chopped parsley for a burst of color and flavor.
