Ingredients:
- 1/4 cup mayonnaise
- 2 teaspoons sugar
- 2 teaspoons cumin
- 3/4 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon garlic powder
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- 4 flour tortillas
- 4 chicken tenderloins
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 4 slices process American cheese
Instructions:
-
Prepare the Sauce:
- In a small bowl, combine the mayonnaise, sugar, cumin, paprika, cayenne pepper, garlic powder, salt, and black pepper. Stir until the ingredients are well incorporated and the sauce is smooth. Set aside.
-
Grill the Chicken:
- Heat a grill pan or skillet over medium heat and add a drizzle of vegetable oil. Grill the chicken tenderloins until they are cooked through and golden brown on both sides, about 4-5 minutes per side. Once cooked, remove the chicken from the pan and let it rest for a few minutes. Then, slice the chicken into thin strips and set aside.
-
Preheat the Skillet:
- Preheat a large skillet over medium heat.
-
Assemble the Quesadillas:
- Working one at a time, lay a flour tortilla in the hot skillet. Sprinkle 1/4 cup of shredded cheddar cheese and 1/4 cup of shredded Monterey Jack cheese on one half of the tortilla.
- Place one slice of American cheese on top of the shredded cheese.
- Arrange about 1/4 cup of the sliced grilled chicken over the cheese on the same half of the tortilla.
- On the empty half of the tortilla, spread about one tablespoon of the prepared sauce.
-
Fold and Cook:
- Using a spatula, fold the tortilla in half to cover the filling. Press gently with the spatula to help seal the edges.
- Cook the quesadilla for 2-3 minutes on each side, or until the cheese is melted and the tortilla is golden brown and crispy.
-
Slice and Serve:
- Once cooked, transfer the quesadilla to a cutting board and slice it into four pieces using a sharp knife.
- Repeat the process with the remaining tortillas and filling ingredients.
- Serve the quesadillas hot, garnished with your favorite toppings such as sour cream, salsa, guacamole, or chopped fresh cilantro.
