Instructions
Step 1: Prepare the Dough
- In a large mixing bowl, combine the whole wheat flour, all-purpose flour, yeast, curd, sugar, salt, and butter.
- Gradually add water while kneading to form a soft and smooth dough.
- Add a few drops of oil and knead further to bring the dough together.
- Cover the bowl with a damp cloth and set it aside in a warm place for 30-40 minutes, allowing the dough to double in size.
Step 2: Make the Chicken Filling
- Heat oil in a pan over medium heat. Add chopped garlic and sauté for 30 seconds until aromatic.
- Stir in the dry spices: red chili powder, cumin powder, black pepper powder, turmeric, garam masala, and coriander powder. Mix well.
- Add the minced chicken and cook thoroughly for 12-15 minutes, stirring occasionally. If the chicken dries out, add a splash of water to help it cook evenly.
- Once the chicken is cooked and fragrant, transfer it to a bowl and let it cool.
- Mix in the grated cheese to create a creamy, flavorful filling.
Step 3: Shape and Fill the Kulchas
- Punch down the risen dough to release air and divide it into lemon-sized balls.
- Roll each ball into a small 2-inch diameter circle using a rolling pin.
- Place a tablespoon or two of the chicken cheese filling in the center.
- Gather the edges of the dough, seal them at the center, and flatten gently into a patty-like shape.
- Dust with flour and roll into an elongated or round kulcha, about 5-6 inches in diameter.
Step 4: Cook the Kulchas
- Preheat a tawa or griddle over medium flame.
- Lightly sprinkle water on one side of the kulcha and press coriander leaves and kalonji seeds onto it.
- Place the kulcha water-side down on the hot tawa. Cook for 1-2 minutes until bubbles appear.
- Flip the kulcha and cook the other side, slathering butter generously.
- Flip again and cook both sides until golden brown and crisp.
