Garam Masala Powder 1 teaspoon
Cheese (grated) 1/2 cup
Coriander Powder (Dhania) 1 teaspoon
For the Kulcha Dough:

Whole Wheat Flour 1/2 cup
Active Dry Yeast 1/2 teaspoon
All Purpose Flour (Maida) 1/2 cup
Curd (Dahi/Yogurt) 1 tablespoon
Sugar 1 teaspoon
Salt To taste
Water To knead the dough
Butter (Salted) 1 tablespoon

Instructions

To begin making the Chicken Cheese Stuffed Kulcha, we will first prepare the dough for the kulcha. In a large mixing bowl, combine the whole wheat flour, all-purpose flour, and salt. In a small bowl, dissolve the active dry yeast and sugar in warm water, allowing it to activate for about 5 minutes. Once frothy, add this mixture to the flour mixture along with the yogurt (curd). Gradually knead the dough, adding water as needed to form a soft, elastic dough. Once the dough comes together, cover it with a damp cloth and allow it to rest for about 15 minutes.

While the dough is resting, prepare the chicken cheese filling. Heat oil in a pan over medium heat and sauté the finely chopped garlic until fragrant. Add the minced chicken and cook until browned. Then, add the red chilli powder, cumin powder, black pepper powder, turmeric powder, garam masala, and coriander powder, stirring well to coat the chicken with the spices. Cook for a few more minutes until the chicken is cooked through and the spices are well blended. Once the chicken mixture is cooked, remove it from the heat and allow it to cool slightly before mixing in the grated cheese.

Once the dough has rested and risen slightly, divide it into small balls, roughly the size of a golf ball. Roll each dough ball into a small circle. Place a spoonful of the chicken and cheese mixture in the center and carefully fold the edges over the filling, sealing it inside. Gently roll the stuffed dough ball into a flattened circle again.

Heat a tawa or griddle on medium-high heat. Place the kulchas on the hot griddle and cook for 2-3 minutes on each side, brushing each side with butter as it cooks. Sprinkle some kalonji (onion nigella seeds) on top while cooking for added flavor.

Once the kulchas are golden brown and crispy on both sides, remove them from the tawa and place them on a plate. Garnish with freshly chopped coriander leaves for a burst of freshness.
