Homemade Chicken and Vegetable Nuggets

Ingredients:

  • 250 grams ground chicken
  • 1 medium carrot, grated
  • 4 tablespoons oat flour or all-purpose flour
  • Cheddar cheese, shredded (as needed)
  • 1 egg
  • 60 ml liquid milk
  • 1 teaspoon cornstarch solution (cornstarch mixed with a little water)
  • Chopped scallions (as needed)
  • For the spice paste:
    • 3 shallots
    • 2 garlic cloves
    • Salt (to taste)
  • Egg white and breadcrumbs for coating

Instructions:

  1. Prepare the Mixture:

    • In a large bowl, combine the ground chicken, grated carrot, flour, shredded cheddar cheese, egg, milk, and the cornstarch solution.
    • Add the finely blended spice paste (shallots, garlic, and salt) to the mixture. Mix thoroughly until the ingredients are well combined and the mixture is smooth and cohesive.
  2. Steam the Mixture:

    • Transfer the mixture into a heatproof container or mold. Steam for approximately 30 minutes, checking occasionally with a fork to ensure it is fully cooked.
  3. Cool and Shape:

    • Once steamed, remove from heat and allow the mixture to cool. Once cooled, cut it into nugget-sized pieces.
  4. Coat and Fry:

    • Dip each nugget piece into egg white, then coat with breadcrumbs.
    • Heat oil in a pan over medium heat and fry the nuggets until golden brown and crispy on all sides.
  5. Storage:

    • Enjoy your freshly made nuggets or store some in the freezer for later use.
