Instructions:

  1. Combine the Dry Ingredients: In a bowl, combine the flour with the salt, sugar, and baking powder.

  2. Incorporate Butter: Add the butter and cut it into the flour mixture using a pastry blender or two knives until the mixture resembles coarse crumbs.

  3. Prepare Dough: Beat the egg yolks lightly and combine them with the milk. Stir this mixture into the flour mixture to form a soft dough.

  4. Chill Dough: Wrap the dough in waxed paper and chill it in the refrigerator for 1 hour.

  5. Prepare Cheese Filling: Meanwhile, beat the egg whites until stiff peaks form. Fold in the grated cheddar cheese and chili powder until well combined.

  6. Roll out Dough: After chilling, roll out the dough as thinly as possible on a floured surface.

  7. Cut Dough Circles: Using a glass, cut the dough into 48 circles.

  8. Fill Dough Circles: Place 1/3 tablespoon of the cheese mixture onto half of the circles, leaving some space around the edges. Cover with the remaining circles.

  9. Seal Empanadas: Moisten the edges of the circles with a little water and press them together firmly to seal the empanadas.

  10. Bake: Arrange the sealed empanadas on a baking sheet and bake them in a preheated 375°F (190°C) oven for 15 minutes or until golden brown.

  11. Serve: Once baked, remove the empanadas from the oven and let them cool slightly before serving. Enjoy these cheesy delights as a savory snack or appetizer!

  12. Storage: Store any leftover empanadas in an airtight container in the refrigerator for up to 3 days. They can also be frozen for longer storage; just reheat them in the oven before serving.
