Instructions:

  1. Preheat the Oven:

  2. Prepare the Tortillas:
    Lightly grease both sides of the corn tortillas with a bit of oil. Arrange them in a single layer on a baking sheet, ensuring there is enough space between each tortilla. Bake in the preheated oven for 5-6 minutes, or until they begin to turn golden and crisp. Flip the tortillas over and continue baking for another 5 minutes until both sides are nicely browned and crispy.

    Alternative Skillet Method:
    If you prefer using a skillet, heat 2 tablespoons of sunflower oil over medium heat. Once hot, place the tortillas in the skillet, one at a time. Cook each side for about 30 seconds until golden brown and crisp, then remove and set aside.

  3. Prepare the Corn Mixture:
    While the tortillas are baking, bring a small pot of water to a boil. Add the sweet corn and a pinch of salt. Cook for about 3-4 minutes until the corn is tender. Drain any excess water and set the corn aside. Add freshly squeezed lemon juice and a dash of black pepper to the corn, and stir to combine.
