Description:

Ingredients:

  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup green onions, finely chopped
  • 3 tbsp Worcestershire sauce
  • 1 tsp mustard powder
  • 1/2 cup butter
  • 1/4 tsp salt
  • 1/4 tsp seasoning salt
  • 1 cup all-purpose flour
  • 4 eggs

Instructions:

  1. Preheat your oven to 400°F (200°C).

  2. In a medium bowl, combine crab meat, shredded cheddar cheese, chopped green onions, Worcestershire sauce, and mustard powder. Mix thoroughly until well combined.

  3. In a large saucepan, combine butter, salt, and seasoning salt. Bring to a boil over medium heat, then remove from heat. Immediately add all-purpose flour, stirring vigorously until the mixture forms a ball.

  4. Add eggs one at a time to the flour mixture, beating well after each addition until fully incorporated.

  5. Blend the crab mixture into the flour and egg mixture until evenly distributed.

  6. Drop small teaspoonfuls of the mixture onto an ungreased baking sheet. At this point, the puffs can be frozen on the baking sheet if you plan to store them for later use.

  7. Bake in the preheated oven at 400°F (200°C) for 15 minutes. Then, reduce the oven temperature to 350°F (175°C) and bake for an additional 10 minutes until the puffs are golden brown and crisp.

  8. Note: If preparing ahead, unbaked puffs can be frozen on a baking sheet and transferred to a plastic freezer bag. When ready to serve, bake directly from the freezer at 375°F (190°C) until crisp.
