Ingredients:

  • 1 1/2 – 2 lbs Raclette cheese
  • 1/2 – 1 lb sharp cheddar cheese
  • 2 lbs small red potatoes
  • 6 sweet Italian sausage links
  • 1/3 lb prosciutto
  • 1/3 lb beef steak, shaved
  • 1 portabella mushrooms
  • 2 bell peppers
  • Olive oil
  • Mandarin orange segments
  • Walnuts

Instructions:

To Do Ahead (30 – 45 minutes prep time):

  1. Begin by removing the rind from the Raclette cheese and slicing it into 1/4-inch thick pieces, sized to fit your Raclette trays. Repeat the same process with the sharp cheddar cheese. Arrange these slices on a platter, cover, and refrigerate.

  2. Slice the portabella mushrooms into 1/4-inch thick slices (or use pre-sliced mushrooms). Cut the bell peppers into long strips. Place the mushrooms and peppers in a Ziploc bag. Prepare a marinade by emulsifying together a package of Good Seasons Italian dressing with balsamic vinegar and olive oil. Pour the marinade into the Ziploc bag, seal it, and gently shake to coat everything. Marinate for up to half a day. Arrange the marinated vegetables on a platter, cover, and refrigerate.

  3. Brown the sweet Italian sausage links on all sides in a skillet. Once nicely browned, boil them until just done, ensuring they remain slightly pink in the middle. Once cooled, slice the sausages into 1/4-inch thick slices on a slight diagonal. Arrange them on a platter alongside the ham slices.
