Description:
This delightful Mexican Casserole recipe, passed down from my aunt Susan, brings together the ease of a weekday meal with the flavors that your whole family will love. It’s akin to the simplicity of hamburger helper but with a taste that surpasses expectations.

Ingredients:

  • 1 lb lean ground beef
  • 1 can (10 oz) enchilada sauce
  • 1 can (11 oz) Mexicorn (Mexican-style corn)
  • 1/2 to 2/3 bag of Doritos (adjust to your preference)
  • 1 cup shredded extra-sharp cheddar cheese

Instructions:

  1. In a skillet over medium heat, brown the lean ground beef until fully cooked. Drain excess fat.

  2. Return the cooked beef to the skillet. Add the enchilada sauce and Mexicorn. Allow the mixture to simmer for 10 minutes, stirring occasionally.

  3. Preheat the oven to 350°F (175°C). Grease a casserole dish with nonstick cooking spray.

  4. Arrange a layer of Doritos on the bottom of the casserole dish, ensuring the chips remain intact.

  5. Spoon half of the meat and corn mixture over the Doritos layer.

  6. Sprinkle a portion of shredded cheddar cheese over the meat mixture.

  7. Repeat the layers: Doritos, meat mixture, and cheese, until all ingredients are used, ending with a generous layer of cheese on top.

  8. Bake the casserole in the preheated oven for about 10 minutes, or until the cheese is melted and bubbly.

  9. Serve hot, accompanied by a fresh salad and a side of jalapeños for those who enjoy an extra kick.

Enjoy this Quick and Easy Mexican Casserole with its satisfying blend of flavors and textures that will surely make it a family favorite!
