Instructions:

Step Description
1 Begin by cooking the chicken. Place 5 drumsticks (frozen) in the crockpot along with the 2 cans of Rotel tomatoes & chilies. Cook on low for 7 hours until the chicken is tender and easily falls off the bone.
2 Once cooked, remove the bones from the chicken and transfer it to a bowl. Add 1 cup of shredded cheese, diced onions, and a bit of the tomato mixture from the crockpot. Mix everything well.
3 Warm the corn tortillas: Spread a thin layer of shortening over each tortilla. Place them on a microwave-safe plate and heat for about 1 minute until they are warm and pliable.
4 Assemble the enchiladas: Spoon 2-3 spoonfuls of the chicken and cheese mixture onto each tortilla. Roll them up tightly like cigars and place them seam side down in a baking dish. Use a 1 1/2 quart pan or a larger one if you’re doubling the recipe.
5 In a separate bowl, combine 1/4 cup of the tomato mixture from the crockpot with sour cream. Mix well.
6 Pour the sour cream mixture over the assembled enchiladas.
7 Sprinkle the remaining shredded cheese over the top of the enchiladas.
8 Cover the baking dish with foil and bake in a preheated oven at 350ยฐF (175ยฐC) for 25 minutes.
9 Once done, remove from the oven and let it cool for a few minutes before serving. Garnish with fresh cilantro, if desired.

Tips:

  • For an extra kick, add sliced jalapeรฑos or a dash of hot sauce to the chicken mixture.
  • Experiment with different cheese blends like Monterey Jack, cheddar, or pepper jack for added flavor.
  • Serve your enchiladas with a side of Mexican rice, refried beans, and a dollop of guacamole for a complete meal.

There you have it! A delightful dish that’s easy on the budget and bursting with flavor. These Awesome Easy Cheese and Chicken Enchiladas are sure to become a family favorite. Enjoy! ๐ŸŽ‰๐ŸŒฏ
