Instructions

To begin making the Cheese Garlic Naan, the first step is to prepare the dough, ensuring it has ample time to rest and rise. In a large mixing bowl, combine the all-purpose flour and whole wheat flour, along with the active dry yeast, salt, minced garlic, finely chopped coriander leaves, and butter. Mix these ingredients thoroughly until they are well incorporated.

Next, gradually add the curd to the flour mixture and knead the dough, incorporating water as needed to achieve a soft and pliable consistency. Once the dough has come together, drizzle in a teaspoon of sunflower oil, continuing to knead until the dough is smooth and elastic. Form the dough into a large ball, place it in a greased bowl, cover it with a damp cloth, and set it aside in a warm environment to rise for about two hours, or until it has doubled in size.

Once the dough has risen beautifully, punch it down gently to release any air pockets, then knead it for a minute before dividing it into equal portions, each roughly the size of a golf ball. Meanwhile, heat a cast iron tawa or skillet over medium heat and prepare it for cooking the naan.

To shape the naans, take one dough ball and roll it out into a 4-inch circle. Place a generous amount of grated cheese in the center and fold the edges over the filling to create a potli (a pouch). Gently flatten the filled dough ball between your palms, dust it with flour, and roll it out further to form an elongated, oval naan.

Next, brush water on one side of the naan, ensuring it is evenly coated. Carefully place the naan on the tawa with the water-coated side facing down. Quickly sprinkle the finely chopped garlic on top, pressing it gently so that it adheres to the naan.

After approximately 40 seconds of cooking, flip the tawa upside down, allowing the naan to come into direct contact with the flame beneath. This method helps achieve that authentic tandoori-style naan texture. Once the naan begins to puff up, use a pair of tongs to carefully detach it from the tawa, cooking the other side directly over the flame for even doneness. Continue to move the naan around as it cooks to ensure it is perfectly charred and golden.

Once cooked, remove the naan from the flame, and slather it generously with butter while it’s still hot, allowing the butter to melt into the warm naan.
