Cheesy Roasted Potatoes

Red potatoes 1 kg
Provola cheese 220 g
Grana Padano DOP (cheese) 80 g
Thyme 3 sprigs
Extra virgin olive oil to taste
Fine salt to taste
Black pepper to taste

Instructions:

  1. Prepare the Oven and Potatoes:
    Preheat your oven to 220°C (428°F) in static mode. Wash the red potatoes thoroughly under cold running water, ensuring all dirt residues are removed. Leave the skin on and slice the potatoes into medium-thick wedges.

  2. Grate the Cheeses:
    Grate the provola cheese using a coarse grater to ensure a nice, melted texture once baked. Grate the Grana Padano DOP to use as an additional cheesy topping.

  3. Assemble the Dish:
    Lightly grease a 34×20 cm (13×8 inch) baking dish with a drizzle of extra virgin olive oil. Sprinkle a portion of the grated Grana Padano on the base of the dish for a cheesy layer. Next, arrange the potato wedges in the dish with the skin side down, filling the base entirely.

  4. Season the Potatoes:
    Drizzle a bit more olive oil over the potatoes, then scatter the thyme leaves evenly across the dish. Season with salt and black pepper to taste. Sprinkle the remaining grated Grana Padano over the potatoes for added flavor.

  5. Bake:
    Increase the oven temperature to 240°C (464°F). Place the baking dish in the oven and bake the potatoes for about 20 minutes, or until they are golden and crispy on the edges and the cheese is melted and bubbling.

  6. Serve:
    Once done, remove from the oven and serve hot, garnished with a sprig of fresh thyme if desired.
