Ingredients

For the Mushroom Ghee Roast Masala:

Methi Seeds (Fenugreek Seeds) 1 teaspoon
Coriander (Dhania) Seeds 2 teaspoons
Cumin Seeds (Jeera) 1 teaspoon
Garlic 6 cloves
Tamarind Paste 1 tablespoon
Ghee 2 tablespoons
Curry Leaves 2 sprigs
Jaggery 2 teaspoons
Salt To taste

For the Chilli Garlic Kulcha:

Whole Wheat Flour 1/2 cup
All Purpose Flour (Maida) 1/2 cup
Green Chilli 1, finely chopped
Garlic 5 cloves, finely chopped
Salt To taste
Active Dry Yeast 1/2 teaspoon
Ghee 1 tablespoon
Sugar 1 teaspoon
Coriander (Dhania) Leaves 2 sprigs, finely chopped
Curd (Dahi/Yogurt) 1/3 cup
Water As required

Other Ingredients:

Britannia Cheese Block 1/2 cup, grated
Butter (Salted) For greasing

Instructions

Step 1: Prepare the Mushroom Ghee Roast Masala

  1. Marinate the Mushrooms:
    Start by cleaning and slicing the button mushrooms. In a small bowl, combine the dry red chilies, whole black peppercorns, cloves, methi seeds, coriander seeds, cumin seeds, garlic, and tamarind paste. Blend the ingredients into a smooth paste using a little water.

  2. Cook the Mushrooms:
    Heat ghee in a pan over medium heat. Add the curry leaves and sauté for a few seconds until fragrant. Add the mushroom slices and cook until they start to release moisture. Stir in the prepared masala paste, jaggery, and salt. Cook the mushrooms on low heat for 10–12 minutes until they are well coated in the masala and cooked through. The mushrooms should be tender and the masala should thicken.

Step 2: Prepare the Chilli Garlic Kulcha Dough

  1. Prepare the Dough:
    In a mixing bowl, combine the whole wheat flour, all-purpose flour, and salt. Add the finely chopped green chili, garlic, and coriander leaves. In a separate small bowl, dissolve the active dry yeast and sugar in warm water. Let it sit for 5 minutes until it becomes frothy.

  2. Mix the Dough:
    Add the yeast mixture, ghee, and curd to the flour mixture. Gradually add water as required to form a smooth, soft dough. Knead the dough for about 8–10 minutes until it becomes elastic and smooth.

  3. Let it Rise:
    Cover the dough with a damp cloth and let it rest in a warm place for about 1 hour, or until it doubles in size.

Step 3: Assemble the Kulcha Sandwiches

  1. Roll the Kulchas:
    After the dough has risen, punch it down and divide it into small portions. Roll each portion into a ball and flatten it into a round disc about 1/2 inch thick.

  2. Stuff with Mushroom Masala:
    Place a spoonful of the prepared ghee roast mushrooms in the center of each kulcha disc. Fold the edges to seal the filling inside, shaping it into a ball again. Roll it out gently to form a flatbread.

Step 4: Cook the Kulchas

  1. Cook the Kulchas:
    Heat a griddle or tava over medium heat. Place the stuffed kulchas on the hot surface and cook on both sides until golden brown, applying a little butter or ghee to each side as it cooks.

Step 5: Assemble the Sandwich

  1. Grate the Cheese:
    Once the kulchas are cooked, open them up gently, and sprinkle the grated Britannia cheese inside. Close them back up, and the residual heat will melt the cheese beautifully inside.

  2. Serve Hot:
    Serve the cheesy kulcha sandwiches hot with your favorite chutney or dip. The melted cheese and spicy mushroom filling make this sandwich a delightful treat for any occasion.
