Instructions

  1. Preparation of Potatoes
Begin by selecting 6 medium-sized potatoes of similar size. This ensures that they will cook evenly. Wash and wrap each potato individually in aluminum foil to retain moisture during baking.

  2. Prepare the Ham and Parsley
While the potatoes bake, cut the cooked ham (prosciutto cotto) into small pieces. Next, finely chop the fresh parsley. This will give a fresh and aromatic touch to the filling.

  3. Bake the Potatoes
Preheat the oven to 200°C (390°F). Place the wrapped potatoes on a baking sheet and bake for 45-60 minutes, depending on the size of the potatoes. To check for doneness, use a skewer or fork to pierce the center. If it goes in smoothly, the potatoes are ready.

  4. Scoop Out the Potato Flesh
Once the potatoes are baked and cool enough to handle, carefully remove the foil and slice them in half lengthwise. Using a spoon, scoop out the insides of the potatoes, leaving a thin layer around the skin to keep the shape intact. Be cautious not to break the skins, as they will serve as the “shell” for the filling.

  5. Prepare the Filling
In a bowl, combine the scooped-out potato flesh with the diced ham, shredded fontina cheese, salt, black pepper, and chopped parsley. Mix well to combine, ensuring all ingredients are evenly distributed.

  6. Stuff the Potatoes
Fill the empty potato skins with the prepared mixture, packing it in tightly to avoid gaps. Arrange the stuffed potatoes in a baking dish. Drizzle a little extra virgin olive oil over the top of each potato to add richness and flavor.

  7. Final Baking
Return the stuffed potatoes to the oven and bake for an additional 15-20 minutes, or until the cheese is melted and the tops are golden and slightly crispy.

  8. Serve and Enjoy
Your stuffed potatoes with ham and cheese are now ready to be served! Enjoy them hot as a delicious appetizer or a savory side dish. These flavorful, comforting potatoes will surely be a hit at any meal!
