Cheesy Ham & Veggie Soup 🥣
Description: This is “souper” easy comfort food – the kind of pantry throw-together we all need some days. I add some cooked elbow pasta to mine as I am a carboholic! Adapted from a recipe found in Hometown Cookbook magazine.

Ingredients:
- 3 cups water
- 3 carrots, sliced
- 1 potato, diced
- 1 onion, chopped
- 1/2 cup celery, chopped
- 2 cups ham, diced
- 1 can diced tomatoes
- 1 can condensed cheese soup
- 1 can condensed cream of celery soup
- 1 cup cheese dip

Instructions:

In a large soup pot, combine water, sliced carrots, diced potato, chopped onion, and chopped celery.

Bring the mixture to a boil over medium-high heat, then reduce the heat to low, cover the pot, and allow it to simmer for about 10 minutes, or until the vegetables are tender.

Add in the diced ham, peas, and diced tomatoes, stirring well to incorporate all the ingredients.

Once again, bring the soup to a boil, then reduce the heat, cover, and let it simmer for an additional 5 minutes to allow the flavors to meld together.

Stir in the condensed cheese soup and condensed cream of celery soup, mixing until they are fully incorporated into the soup.

Finally, add in the cheese dip, stirring continuously until it’s melted and the soup is heated through.
