Step 1: Prepare the Dough

  1. Begin by activating the yeast: In a small bowl, combine the active dry yeast, lukewarm water, and sugar. Allow it to sit for about 5–10 minutes, or until the mixture becomes bubbly, indicating the yeast is active.

  2. In a large mixing bowl, add the all-purpose flour (maida) and pour in the yeast mixture. Add milk, sunflower oil, and a pinch of salt to the bowl. Gradually add lukewarm water (approximately 1/2 cup or as needed) to form a soft dough.

  3. Knead the dough for about 5–7 minutes until it is smooth and elastic. Once kneaded, shape the dough into a ball, and lightly grease it with a little sunflower oil.

  4. Place the dough back into the bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until it doubles in size.

Step 2: Prepare the Stuffing

  1. Heat the sunflower oil and butter in a pan over medium heat. Once the butter begins to melt, add the finely chopped carrot, green bell pepper, and cabbage. Sauté the vegetables for 2–3 minutes until they are slightly tender but still crisp.

  2. Add the roasted tomato pasta sauce, red chili sauce, black pepper powder, and salt to the vegetables. Stir everything together and cook for another 2 minutes, allowing the flavors to blend.

  3. Remove the pan from the heat and let the stuffing mixture cool down. Once cooled, set it aside.

Step 3: Assemble the Buns

  1. Once the dough has proofed and doubled in size, punch it down gently and divide it into small lemon-sized portions.

  2. Dust a clean surface with some dry flour and roll each dough portion into a small, flat disc using a rolling pin.

  3. Place a spoonful of the prepared vegetable stuffing in the center of each dough disc. Add about 1 tablespoon of grated cheese (Gouda or your preferred cheese) on top of the stuffing.
