Instructions:
- Preheat the oven to 400°F (200°C).
- Prepare a nonstick mini-muffin tin with 12 wells (each measuring 1/8 cup) that are 1 3/4 inches in diameter and 3/4-inch deep by buttering them generously.
- In a small bowl, combine 1 tablespoon of flour with half of the pine nuts.
- Dust the muffin tins with the flour and nut mixture, tapping out any excess.
- Melt 1 tablespoon of butter in a small saucepan over medium-high heat.
- Stir in the remaining 1 1/2 tablespoons of flour and the diced jalapenos, cooking and stirring for about 2 minutes.
- Gradually whisk in the milk, then add the grated Gruyere cheese, kosher salt, freshly ground black pepper, Dijon mustard, and egg yolk, stirring until well combined.
- Allow the mixture to cool to room temperature.
- Beat the egg white until firm but not stiff.
- Fold a quarter of the beaten egg white into the cheese sauce mixture, then gently fold in the remaining egg white.
- Spoon the mixture into the prepared muffin tins, sprinkle with the remaining pine nuts, and bake in the preheated oven until puffed and golden, approximately 7 to 10 minutes.
- Cool the soufflés in the tins on wire racks.
- Once cooled, run a small knife around the edge of each soufflé (they will fall slightly as they cool). They can be prepared up to a day in advance and refrigerated.
- Before serving, bake the soufflés in the muffin tins in a preheated 400°F (200°C) oven for 5 to 7 minutes.
