Ingredients:

1/8 tsp Dijon mustard

1 Egg

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Prepare a nonstick mini-muffin tin with 12 wells (each measuring 1/8 cup) that are 1 3/4 inches in diameter and 3/4-inch deep by buttering them generously.
  3. In a small bowl, combine 1 tablespoon of flour with half of the pine nuts.
  4. Dust the muffin tins with the flour and nut mixture, tapping out any excess.
  5. Melt 1 tablespoon of butter in a small saucepan over medium-high heat.
  6. Stir in the remaining 1 1/2 tablespoons of flour and the diced jalapenos, cooking and stirring for about 2 minutes.
  7. Gradually whisk in the milk, then add the grated Gruyere cheese, kosher salt, freshly ground black pepper, Dijon mustard, and egg yolk, stirring until well combined.
  8. Allow the mixture to cool to room temperature.
  9. Beat the egg white until firm but not stiff.
  10. Fold a quarter of the beaten egg white into the cheese sauce mixture, then gently fold in the remaining egg white.
  11. Spoon the mixture into the prepared muffin tins, sprinkle with the remaining pine nuts, and bake in the preheated oven until puffed and golden, approximately 7 to 10 minutes.
  12. Cool the soufflés in the tins on wire racks.
  13. Once cooled, run a small knife around the edge of each soufflé (they will fall slightly as they cool). They can be prepared up to a day in advance and refrigerated.
  14. Before serving, bake the soufflés in the muffin tins in a preheated 400°F (200°C) oven for 5 to 7 minutes.
