Instructions:

  1. Prepare the Crust:
    Start by making the samosa dough. In a large mixing bowl, combine the all-purpose flour (maida) with ajwain (carom seeds) and salt. Add the ghee and rub it into the flour mixture using your fingertips until the mixture resembles breadcrumbs. Gradually add water, a little at a time, and knead it into a smooth, firm dough. Cover the dough with a damp cloth and let it rest for about 15 minutes.

  2. Prepare the Filling:
    While the dough is resting, prepare the cheese filling. In a medium-sized bowl, combine the grated Britannia Cheezza, finely chopped pickled jalapenos, Britannia Cheese Spread – Four Pepper Tango, and freshly chopped coriander leaves. Mix everything together until well incorporated.

  3. Shape the Samosas:
    Once the dough has rested, divide it into small equal-sized balls. Roll each ball into a smooth, round shape and then flatten it out into a thin oval or circle (approximately 4-5 inches in diameter) using a rolling pin. Be sure to roll the dough evenly so that it cooks uniformly.

  4. Fill the Samosas:
    Cut each rolled circle in half to form two semi-circular pieces. Create a cone shape by folding each half-circle into a triangle, sealing the edges with a little water to form a pocket. Fill the pocket with the prepared cheese and jalapeno filling, making sure not to overstuff it. Seal the open edges of the samosa tightly, pinching the sides to create a crisp, secure seal.

  5. Fry the Samosas:
    Heat ghee or oil in a deep frying pan over medium heat. To check if the oil is ready, drop a small piece of dough into the oil; if it rises to the surface immediately, the oil is hot enough. Carefully drop the prepared samosas into the hot oil, one at a time. Fry in batches, making sure not to overcrowd the pan. Fry the samosas for about 4-5 minutes, or until they are golden brown and crispy on all sides. Remove them from the oil and drain on a paper towel to remove excess oil.

  6. Serve:
