Instructions:

This recipe can be made vegetarian by omitting the hamburger and adding 2 cups of fresh mixed vegetables such as broccoli, mushrooms, spinach, carrots, etc.

Cook the elbow macaroni “Al dente”, according to the instructions on the box. Drain and add to a large casserole dish.

In a skillet, scramble-fry the hamburger with Spanish onion and garlic (if using) until no longer pink. Drain any fat through a colander, then add the drained mixture to the casserole dish.

Add the cheese soup (without water) to the casserole dish.

Add the whole tomatoes and stewed tomatoes to the casserole dish.

Season with salt and pepper to taste.

Mix all the ingredients thoroughly in the casserole dish to evenly distribute.

Spread grated or sliced cheddar cheese evenly over the top of the casserole.

Preheat the oven to 400 degrees Fahrenheit. Bake the casserole, uncovered, for 30 minutes or until bubbling around the edges and the cheese topping is melted and slightly browned.
