This recipe, lovingly passed down through generations from Grandma to Mom to Me, has become a cherished favorite among my family, with even my grandchildren now embracing its deliciousness. Fondly dubbed “Belly Buster” by the kids for its irresistible nature, it has been a staple in our households, whether made with or without the addition of hamburger. Not only does it hold a special place in our hearts, but it also freezes exceptionally well, making it a convenient go-to meal for busy days.

Ingredients:

Ingredient Quantity
Elbow macaroni 1
Lean hamburger 1/2 – 1
Spanish onion 1
Garlic 2 – 3 cloves
Whole tomatoes 1
Stewed tomatoes 1
Cheddar cheese 2 – 4 cups

Instructions:

  1. This recipe can be made vegetarian by omitting the hamburger and adding 2 cups of fresh mixed vegetables such as broccoli, mushrooms, spinach, carrots, etc.

  2. Cook the elbow macaroni “Al dente”, according to the instructions on the box. Drain and add to a large casserole dish.

  3. In a skillet, scramble-fry the hamburger with Spanish onion and garlic (if using) until no longer pink. Drain any fat through a colander, then add the drained mixture to the casserole dish.

  4. Add the cheese soup (without water) to the casserole dish.

  5. Add the whole tomatoes and stewed tomatoes to the casserole dish.

  6. Season with salt and pepper to taste.

  7. Mix all the ingredients thoroughly in the casserole dish to evenly distribute.

  8. Spread grated or sliced cheddar cheese evenly over the top of the casserole.

  9. Preheat the oven to 400 degrees Fahrenheit. Bake the casserole, uncovered, for 30 minutes or until bubbling around the edges and the cheese topping is melted and slightly browned.

  10. Serve hot, with optional accompaniments such as a fresh salad. This recipe serves 4-6 people, or 8 when served with a salad.

Enjoy this hearty and satisfying Belly Buster dish with your loved ones, creating cherished memories with each flavorful bite! 🍽️🧀🥩🍅
