  4. Add Tomatoes & Green Chillies: Add the chopped tomatoes and green chillies to the mixture. Continue sautรฉing until the tomatoes soften and become mushy, approximately 5 minutes.
  5. Spices: Now, add the dry masalas โ€“ curry powder, red chili powder, and salt to taste. Stir well and let the mixture cook for another 3-4 minutes, allowing the tomatoes to break down and the spices to blend.

Step 2: Cook the Vegetables

  1. Add Steamed Vegetables: To the pan, add the steamed mixed vegetables (like French beans, carrots, peas, etc.). Using the back of the spoon, mash the vegetables slightly to break them up and mix them into the curry sauce.
  2. Adjust Consistency: If the mixture feels too dry, add a little water (about ยฝ cup) to achieve a moist, curry-like consistency. Cook the mixture for another 5 minutes until the vegetables are well combined and cooked through.
