Total Time: 40 minutes

Cuisine: North Indian

Diet: Vegetarian

Instructions:

  1. Prepare the Dough:

    • In a mixing bowl, combine wheat flour, maida (all-purpose flour), and oats. Add salt to taste and 2 tablespoons of oil.
    • Gradually add water and knead the mixture into a smooth and firm dough. Cover with a damp cloth and let it rest for 10 minutes.
  2. Prepare the Filling:

    • In a separate bowl, take the boiled sprouted moong and boiled sweet potato. Mash them together until smooth.
    • Add chilli flakes, mixed herbs, and additional salt to the mixture. Stir well to combine. Set this filling aside.
  3. Assemble the Kachori:

    • Divide the dough into small, equal-sized balls.
    • Flatten each dough ball into a small disc using your fingers or a rolling pin.
    • Place a small portion of the prepared filling in the center of each disc. Add a small cube of mozzarella cheese in the middle.
    • Carefully fold the edges of the dough over the filling to seal the kachori, ensuring there are no gaps. Shape them into round balls or flattened discs, ensuring the filling is securely enclosed.
  4. Fry the Kachori:

    • Heat sufficient oil in a deep pan or kadai over medium heat.
    • Once the oil is hot, gently slide the prepared kachoris into the oil, a few at a time. Do not overcrowd the pan.
    • Fry the kachoris, turning them occasionally, until they are golden brown and crispy on both sides. This should take around 4-5 minutes per side.
  5. Serve:

    • Once fried to a crispy perfection, remove the kachoris from the oil and place them on a paper towel to absorb any excess oil.
    • Serve the Moong Cheese Kachori hot with coriander-mint chutney and sweet tamarind chutney for a refreshing contrast.

Tips for Perfect Moong Cheese Kachori:

  • If you prefer a healthier version, you can bake the kachoris at 350°F (175°C) for about 25-30 minutes until golden and crispy.
  • Be sure to seal the edges of the dough tightly to prevent the filling from spilling out during frying.
  • You can add spices like cumin powder or garam masala to the filling for extra flavor, if desired.

Enjoy your Moong Cheese Kachori as a perfect snack, perfect for sharing with friends and family or enjoying during a cozy tea-time!

This recipe brings together a blend of textures and flavors, from the crispy exterior to the cheesy and savory filling, ensuring every bite is packed with goodness. Whether you’re a fan of traditional kachoris or seeking a new twist, this version with cheese and sprouted moong will surely become a favorite!
