Instructions

  1. Prepare the dough:
    In a large mixing bowl, combine wheat flour, maida (all-purpose flour), oats, and salt. Add the oil and mix everything well. Gradually add water and knead the mixture into a smooth, firm dough. Cover the dough with a damp cloth and set it aside for 10-15 minutes to rest.

  2. Prepare the filling:
    In a separate bowl, combine the boiled sprouted mung beans and boiled sweet potato. Mash them together gently. Add the mozzarella cheese, salt, chilli flakes, and mixed herbs to the mixture. Mix everything thoroughly to form a uniform stuffing.

  3. Form the kachoris:
    After the dough has rested, divide it into small portions and roll each portion into a ball. Flatten each ball into a small disc. Place a spoonful of the prepared filling in the center of each disc. Carefully seal the edges by bringing the four corners together, forming a ball again, and then flattening it into a kachori shape.

  4. Fry the kachoris:
    Heat oil in a deep frying pan over medium heat. Once the oil is hot, carefully place the prepared kachoris into the oil, one by one. Fry them until they turn golden brown and crisp on both sides, which should take about 4-5 minutes per kachori.

  5. Serve:
