Ingredients:

  • 1 1/2 cups water
  • 1 teaspoon salt
  • 1 cup long grain rice
  • 1/2 cup margarine
  • 1 tablespoon butter
  • 1/4 cup celery, finely chopped
  • 2 tablespoons onion, minced
  • 1 egg
  • Freshly ground pepper, to taste
  • 1/2 cup Swiss cheese, shredded
  • 1 can (about 14 ounces) salmon, drained and flaked
  • 1 cup 2% low-fat milk
  • 1 cup skim milk
  • 1/2 teaspoon nutmeg
  • 1 teaspoon curry powder
  • 1/2 teaspoon cinnamon

Instructions:

1 Bring water and salt to a boil in a saucepan. Add rice, bring to a boil again, then cover, reduce heat, and simmer for about 15 minutes, until all water is absorbed and rice is tender.
2 Grease a 9-inch pie plate with 1 teaspoon of margarine.
3 In a frying pan, melt the remaining margarine over medium heat.
4 SautΓ© celery and onion in the melted margarine for about 4 minutes, or until tender.
5 In a small bowl, beat 1 egg and season with freshly ground pepper. Mix the egg into the cooked rice.
6 Press the seasoned rice onto the bottom and sides of the prepared pie plate to form the crust.
7 Sprinkle half of the shredded Swiss cheese evenly over the rice crust.
8 Spread half of the sautΓ©ed celery and onion mixture over the cheese layer, followed by half of the flaked salmon.
9 Layer the remaining sautΓ©ed celery and onion mixture and salmon over the first layer.
10 Sprinkle the remaining shredded Swiss cheese evenly over the pie.
11 In a separate bowl, beat together the remaining egg, 2% low-fat milk, skim milk, nutmeg, curry powder, and cinnamon until well combined.
12 Pour the egg and milk mixture over the ingredients in the pie plate.
13 Preheat your oven to 375Β°F (190Β°C).
14 Bake the pie in the preheated oven for 30 to 35 minutes, or until a tester inserted in the center comes out clean.
15 Allow the pie to cool for 5 minutes before slicing it into 6 wedges.
