Ingredients:

Instructions:

  1. Preheat Oven: Heat your oven to 375ยฐF (190ยฐC).

  2. Roast Peppers: Arrange the red and yellow bell peppers on a foil-lined baking sheet. Roast them in the preheated oven until blackened and soft, turning once or twice during the process. This should take around 25 to 30 minutes.

  3. Steam Peppers: Once roasted, transfer the peppers to a bowl and cover them with plastic wrap. Allow them to stand for about 10 minutes. This steaming process helps in loosening the skins of the peppers, making them easier to peel.

  4. Prepare Marinade: While the peppers are steaming, prepare the marinade. In a large bowl, combine the extra virgin olive oil, red wine vinegar, lemon juice, minced garlic, leaves from about half of the thyme sprig, and season with salt and pepper to taste.

  5. Peel and Slice Peppers: After the steaming period, remove the peppers from the bowl. Peel off the skins, scrape out the seeds, and remove the stems. Cut each pepper into quarters.

  6. Marinate Peppers: Add the roasted pepper quarters to the prepared marinade. Ensure all the peppers are coated well. Cover the bowl with plastic wrap and refrigerate for 2 to 3 hours to allow the flavors to meld.

  7. Garnish and Serve: When ready to serve, arrange the marinated peppers on individual plates. Garnish with black olives, slices of orange, and the remaining thyme leaves. Crumble goat cheese over the peppers and season with additional freshly ground pepper if desired.
