To make this hearty and flavorful Potato and Sausage Casserole, start by preparing your ingredients. Begin by peeling and slicing the white onion. Finely chop the rosemary needles. For the sausage, make a lengthwise incision to remove the casing, if necessary.
In a large skillet, heat a generous amount of extra virgin olive oil over medium heat. Once the oil is hot, add the sliced onions and sauté them until they soften and become translucent. Add the sausage meat to the pan, breaking it apart with a spoon, and cook it until it’s browned and cooked through. This should take about 5 minutes. Once the sausage is nicely browned, pour in the white wine to deglaze the pan, scraping up any flavorful bits stuck to the bottom of the pan. Let it cook for another 7 minutes to allow the alcohol to evaporate and the flavors to meld together. Once done, turn off the heat and set the mixture aside.
Next, prepare a 30×20 cm rectangular baking dish by greasing it with a bit of olive oil. Then, sprinkle the bottom and sides of the dish with breadcrumbs to create a light coating. This will help prevent sticking and add texture to the casserole.
