Ingredients:

Potatoes 4, boiled and peeled
Onion 1, finely chopped
Sweet Corn 1 cup, boiled
Mozzarella Cheese ½ cup, shredded
Fresh Coriander (Cilantro) A small bunch, chopped
Red Chilli Flakes As per taste, optional
Oregano As per taste, optional
Lemon Juice 2 teaspoons
Butter 2 teaspoons
Salt As per taste

Cooking Time: 30 minutes

Total Time: 50 minutes

Serves: 4-6 people


Instructions:

  1. Boil the Potatoes:
    Start by boiling the potatoes. Place them in a pressure cooker with enough water to cover them and cook for 3 whistles. Let the pressure release naturally. Once done, peel the potatoes and slice them into rounds. Set them aside.

  2. Cook the Filling:
    Heat butter in a pan over medium heat. Add the finely chopped onions and sauté until they become soft and translucent. Once soft, add the boiled sweet corn and salt to the onions. Stir well to combine.

  3. Add Seasonings:
    Sprinkle in the red chilli flakes and oregano (if using). Stir everything together. Now, add the lemon juice, mix well, and turn off the heat. Set this mixture aside.

  4. Fry the Potato Slices:
    In a separate pan, heat a little oil or butter. Place the potato slices and fry them on both sides until they turn golden brown and crispy. Sprinkle a pinch of salt on the fried potatoes and set them aside.

  5. Assemble the Dish:
    Take a fried potato slice, and top it with a spoonful of the sweet corn mixture. Add some shredded mozzarella cheese on top of the corn. If you prefer the cheese melted, you can microwave the assembled potatoes for about 30 seconds until the cheese is nice and gooey.

  6. Garnish & Serve:
    Garnish the cheesy potatoes with freshly chopped coriander (cilantro). Serve immediately with a cup of masala chai or filter coffee for a perfect snack experience.


Tips for Perfect Cheesy Potatoes:

  • Cheese Variations: If you prefer a different cheese, feel free to experiment with cheddar or a combination of cheeses for extra flavor.
  • Spice Level: Adjust the amount of red chilli flakes based on your spice preference. You can even omit them for a milder version.
  • For Extra Crispness: After frying the potato slices, you can place them in the oven at a high temperature (around 200°C or 400°F) for an additional 5-10 minutes to get them extra crispy before assembling.
