Green peas (Matar), coarsely crushed 1/2 cup
Onion, finely chopped 1 medium
Cheese, grated 1 cup
Green Chilli, finely chopped 1
Ginger, grated 1/2 inch piece
Kasuri Methi (Dried Fenugreek Leaves), lightly roasted and crushed 1/2 teaspoon
Cumin seeds (Jeera) 1/4 teaspoon
Amchur (Dry Mango Powder) 1/2 teaspoon
Turmeric powder (Haldi) 1/2 teaspoon
Red Chilli powder 1/2 teaspoon
Garam masala powder 1/2 teaspoon
Coriander powder (Dhania) 1/2 teaspoon
Coriander (Dhania) Leaves, chopped A few sprigs
Salt To taste
Oil For brushing

Instructions:

  1. Prepare the Dough:

    • Begin by preparing the dough for the potlis. In a large mixing bowl, combine Vivatta Maida (all-purpose flour), ajwain (carom seeds), salt, and baking soda.
    • Add 1 tablespoon of oil or ghee to the dry ingredients and mix well.
    • Gradually add water in small amounts and knead to form a firm dough. The dough should neither be too soft nor too hard. Once the dough is ready, cover it with a damp kitchen cloth and set it aside for 15-20 minutes to rest.
  2. Prepare the Filling:

    • While the dough is resting, prepare the filling. Heat a little oil in a pan and sauté finely chopped onion until golden brown.
    • Add the boiled and mashed potatoes to the pan. Stir to mix well.
    • Now, add the coarsely crushed green peas, grated cheese, finely chopped green chili, and grated ginger to the pan. Stir until the mixture is well combined.
    • Add kasuri methi (crushed fenugreek leaves), cumin seeds, amchur (dry mango powder), turmeric powder (haldi), red chili powder, garam masala powder, and coriander powder (dhania) to the filling mixture. Cook for a few minutes on low heat, allowing the spices to infuse.
    • Finally, add chopped coriander leaves and salt to taste. Mix everything together and remove from heat.
  3. Shape the Potlis:

    • After the dough has rested, divide it into small equal portions.
    • Roll each portion into a small ball and flatten it into a round disc. The discs should be about 2-3 inches in diameter.
    • Place a spoonful of the prepared filling in the center of each disc.
    • Carefully fold the edges of the disc to form a pouch-like shape, pinching the edges to seal the potli securely.
  4. Cook the Potlis:

    • Heat a pan or griddle and lightly brush it with oil.
    • Place the prepared Cheesy Potato Peas Potlis on the griddle and cook on medium heat, flipping them occasionally to ensure even browning on all sides.
    • Continue cooking for about 7-10 minutes or until the potlis turn golden and crisp on the outside.
  5. Serve:
