Description: Pierogies in a pan! This is a wonderful, rich casserole that tastes just like potato and cheese pierogies (without all the fuss!) Nice, hearty comfort food!! Can be served as a main dish with veggies or a salad, or as a side dish.

Ingredients:

  • 9 – 12 lasagna noodles
  • 1 1/4 cups butter, divided
  • 4 onions, thinly sliced
  • 10 – 12 potatoes, peeled and boiled
  • 1 pound Velveeta cheese, cubed
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions:

  1. Saute Onions: In a large skillet, melt 1/4 cup of butter over medium heat. Add thinly sliced onions and sauté until tender and caramelized, about 10-15 minutes. Set aside.

  2. Cook Noodles: Cook the lasagna noodles according to the package instructions until al dente. Drain and set aside.
