Instructions

  1. Prepare the Mozzarella:
    Start by dicing the mozzarella into small cubes. Place them in a fine-mesh strainer over a bowl and let the excess liquid drain out for about 30 minutes. This helps prevent the dish from becoming too watery.

  2. Cook the Quinoa:
    In a large pot, bring water to a boil. Rinse the quinoa thoroughly under cold running water using a fine-mesh sieve to remove any bitter saponins. Once the water is boiling, add the quinoa and let it cook for about 15 minutes (or according to package instructions). Once cooked, drain the quinoa and let it cool for about 15 minutes.

  3. Prepare the Tomato Sauce:
    While the quinoa cools, take the canned tomatoes
