Recipe: Rice with Potatoes and Scamorza

Prep the Ingredients:
Begin by peeling and thinly slicing the white onion. Wash the cherry tomatoes and cut them in half. Set aside. -
Cook the Base:
In a large saucepan, pour a drizzle of extra virgin olive oil and crumble the dried chili pepper into the oil. Add the sliced onion and cook over medium heat for a few minutes until the onion softens and becomes translucent. -
Add the Tomatoes and Potatoes:
Once the onion is softened, add the halved cherry tomatoes to the pan. Next, peel and chop the potatoes into cubes, and add them to the pan. Stir well to combine. -
Simmer the Mixture:
Add a sprig of rosemary to the pan, season with a pinch of salt, and cover the mixture with plenty of hot water. Let it simmer over medium heat for about 30 minutes, or until the potatoes are tender. -
Prepare the Scamorza Cheese:
While the potatoes cook, slice the scamorza cheese into cubes and set aside. -
Toast the Rice:
In a separate non-stick pan, toast the Carnaroli rice without adding any oil or fat. Stir the rice constantly as it heats up, ensuring it does not burn. Once the rice becomes hot, remove it from the heat. -
Combine the Rice and Potato Mixture:
Once the potatoes are nearly cooked, remove the sprig of rosemary from the saucepan. Add the toasted rice to the pot with the potato and tomato mixture. Gradually pour in hot water, stirring the rice frequently until it’s fully cooked and the flavors are absorbed. -
Finish the Dish:
When the rice is cooked and the water has been absorbed, turn off the heat. Stir in the cubes of scamorza cheese until it melts and coats the rice and potatoes, creating a creamy, cheesy texture. -
Serve:
Plate the rice with potatoes and scamorza, then enjoy this delicious and comforting dish!
