Schiacciate with Peppers and Scamorza

Instructions:

Roast the Peppers:
Start by roasting the bell peppers. Place them on a baking sheet lined with parchment paper and bake in a preheated oven at 250°C (482°F) for about 20 minutes, turning them occasionally to ensure they roast evenly. When the peppers are nicely charred and soft, remove them from the oven and place them while still hot in a plastic bag. This will help loosen their skins for easy peeling. -
Prepare the Scamorza:
While the peppers are roasting, cut the scamorza (or provola) cheese into thick sticks, approximately 3 cm wide. Set aside for later. -
Prepare the Stuffed Peppers:
Once the peppers are cool enough to handle, peel off the skins, remove the seeds, and cut them into strips. Take each strip of roasted pepper and wrap it around a stick of scamorza. This will create a delicious, cheesy pepper roll. -
Season and Prepare for Baking:
Lay the stuffed pepper rolls on a baking tray. Sprinkle minced garlic over them, followed by breadcrumbs, grated pecorino cheese, and a generous pinch of oregano. Drizzle a little extra virgin olive oil over the top to enhance the flavor and help them crisp up during baking. -
Bake the Rolls:
Place the tray in the oven and bake for about 10 minutes at 200°C (392°F), or until the scamorza cheese has fully melted and the breadcrumbs have turned golden brown. -

Once baked, remove the stuffed peppers from the oven and place each roll on a piece of freshly baked Schiacciata flatbread from “La Bottega di Olivia & Marino.” Serve these appetizers warm for the best experience!
