Title: Teflon Muffin with Smoked Beef

Ingredients:

For the Batter:

  • 2 large eggs (originally 3)
  • 75 grams butter (originally 150 grams)
  • 3.5 tablespoons powdered sugar (originally 100 grams)
  • A pinch of beef seasoning (originally 1 teaspoon)
  • A pinch of salt (adjusted for salted butter, originally 1/2 teaspoon)
  • 2 tablespoons milk powder

For the Filling:

  • 1/4 onion (originally 1 whole onion), diced
  • 3 slices smoked beef (originally 5-7 slices), diced
  • 50 grams cheese (finely sliced or grated)

For the Dry Ingredients:

  • 1 cup all-purpose flour (originally 300 grams)
  • 1/2 teaspoon baking powder

Instructions:

  1. Prepare the Batter:

    • In a mixer, beat the butter and powdered sugar until light and creamy. Note: If your butter isn’t soft, it might not achieve the desired whiteness, but continue mixing until it’s as creamy as possible.
    • Add one egg to the mixture and mix thoroughly for about 3 minutes. Then, add the remaining egg and continue mixing until well incorporated.
  2. Combine the Ingredients:

    • Mix in the diced onions, smoked beef, and cheese until evenly distributed throughout the batter.
    • Sift the flour and baking powder together, then gradually fold them into the batter using a spatula until fully combined.
  3. Cook the Muffins:

    • Heat a non-stick Teflon pan over the lowest heat setting. Pour the batter into the pan, spreading it out evenly.
    • Cover the pan with a lid and cook until you hear a gentle hissing sound, indicating that the muffins are cooking through. This should take some time on low heat. Check for doneness by inserting a toothpick or skewer into the center; it should come out clean.
  4. Finish and Serve:

    • Once cooked, remove the muffins from the pan and top with additional cheese if desired. The cheese will melt over the warm muffins, adding a delightful extra layer of flavor.
  5. Enjoy:

    • Slice open to reveal the melted cheese and cooked onions and smoked beef inside. These muffins are not dense but have a rich, flavorful interior thanks to the cheese and beef. Serve warm and enjoy a savory, satisfying treat.

This recipe offers a comforting and delicious twist on traditional muffins, perfect for a hearty breakfast or a savory snack.
