Instructions:

  1. Saute Okra and Onion:

    • Using medium heat, sauté okra and onion in a small amount of bacon drippings until crisp-tender.
  2. Add Tomatoes:

    • Add chopped tomato; stir, cooking for about 5 minutes.
  3. Sprinkle Crushed Crackers:

    • Sprinkle on crushed crackers. Blend lightly. Cook for about 5 minutes.
  4. Reduce Heat:

    • Reduce heat.
  5. Add Egg:

    • Break egg onto the mixture. Blend lightly until the egg begins to set.
  6. Shape and Cheese:

    • Shape into a flat mound. Sprinkle grated cheese on top and slip under the broiler until the cheese melts.

Cook Time:

  • Preparation: 5 minutes
  • Cooking: 20 minutes
  • Total: 25 minutes
