Ingredients:

  • 1 boneless, skinless chicken breast, cut into 1/2-inch cubes
  • 2 cups tortilla chips
  • 1/2 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/4 cup sliced black olives
  • 2 tablespoons chopped green chilies
  • 1/2 cup chopped tomato
  • Salsa, sour cream, diced jalapenos, guacamole (for serving)

Instructions:

  1. Prepare Chicken:

    • Heat oil in a skillet over medium heat.
    • Add the chicken cubes and cook until almost done.
  2. Season Chicken:

    • Sprinkle taco seasoning mix over the chicken, stirring to coat evenly.
    • Cook until the chicken is no longer pink. Set aside to cool slightly.
  3. Assemble Nachos:

    • Preheat your oven to 325°F (160°C).
    • In a 13 x 9-inch casserole dish, arrange half of the tortilla chips.
    • Spread half of the bean dip over the chips, using your fingers for even distribution.

  4. Layer Again:

    • Repeat the layering process with the remaining tortilla chips, bean dip, cheeses, chicken, black olives, green chilies, and tomatoes.
  5. Bake:

    • Place the assembled nachos in the preheated oven.
    • Bake until the cheese is completely melted and bubbly, about 15-20 minutes. Keep an eye on the nachos to ensure they don’t overcook.
  6. Serve:

    • Remove from the oven and let cool slightly.
    • Serve hot, accompanied by salsa, sour cream, diced jalapenos, guacamole, or your favorite toppings.
