Description:

Ingredients:

1 tsp Baking powder
12 Eggs
4 cups Monterey Jack cheese, shredded (divided)
2 cups Small curd cottage cheese
2 Plum tomatoes, diced
1 can (4 oz) Green chilies, diced

1/2 tsp Dried oregano
1/2 cup Fresh cilantro, chopped
1/2 tsp Parsley, chopped

Instructions:

  1. Preheat the Oven: Preheat your oven to 400Β°F (200Β°C).

  2. Prepare the Batter: In a large mixing bowl, combine the all-purpose flour and baking powder.

  3. Mix Wet Ingredients: Add in the eggs, 3 1/2 cups of shredded Monterey Jack cheese, cottage cheese, diced tomatoes, green chilies, chopped green onions, hot pepper sauce, dried oregano, chopped fresh cilantro, chopped parsley, salt, and pepper.

  4. Combine Well: Mix all the ingredients until well combined.

  5. Prepare Baking Dish: Grease a 13x9x2-inch baking dish with cooking spray or butter.

  6. Pour Batter: Pour the prepared egg mixture into the greased baking dish, spreading it out evenly.
