Looking for a nice quick lunch for yourself or for you and your honey? This quesadilla recipe is perfect! It’s easy to make, and it can be adjusted to serve one or two people. Plus, you can get creative with the ingredients – there’s always something left over in the fridge to be used up, so use your imagination! Whether you’re cooking for yourself or for a loved one, this recipe is sure to please.
Ingredients:
- 1 or 2 flour tortillas (depending on serving size)
- 2 slices deli chicken, turkey, ham, beef, or shrimp
- 1/3 cup shredded cheddar cheese
- 1/4 cup shredded monterey jack cheese
- 1/4 cup chopped tomato
- 1/4 cup chopped green chili pepper
- 1/4 cup chopped green onion
- 1/4 cup chopped green bell pepper
- Optional: black olives, sour cream, salsa, guacamole, fresh cilantro
Instructions:

Preheat Pan: Brush a pan with oil (or use vegetable cooking spray) and heat it over medium heat.

Warm Tortilla: Place a tortilla in the heated pan and let it warm up on one side.

Add Ingredients: Flip the tortilla over, then sprinkle one half with shredded cheddar and monterey jack cheese. Add the deli meat slices, chopped tomato, green chili pepper, green onion, and green bell pepper on top of the cheese.

Melt Cheese: Cook until the cheese is melted and the bottom of the tortilla is golden brown.

Finish Quesadilla: Carefully remove the quesadilla from the pan and transfer it to a plate. If desired, top with guacamole, salsa, sour cream, or any other preferred toppings.
