Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes
Yield: 12-15 pieces
Ingredients:
- 1 1/4 cups all-purpose flour
- 3/4 cup cornmeal
- 1/4 cup sugar
- 2 teaspoons baking powder
- 1/4 teaspoon cayenne pepper
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 egg
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 pound ground beef
- 1/2 cup water
- 2 packages taco seasoning, divided
- 1 cup sour cream
- 1 cup whole kernel corn
- 1 cup black beans, rinsed and drained
- 1 cup salsa
Instructions:
-
Prepare the Crust:
- In a large bowl, combine the all-purpose flour, cornmeal, sugar, baking powder, cayenne pepper, chili powder, and salt.
- In a separate bowl, whisk together the milk, and egg. Stir the wet ingredients into the dry ingredients until just combined.
- Stir in the shredded cheddar and Monterey Jack cheeses.
- Spread the mixture into a greased 15 x 10 x 1 inch baking pan.
-
Bake the Crust:
- Preheat the oven to 400°F (200°C).
- Bake the crust for 10-12 minutes, or until a toothpick inserted into the center comes out clean.
-
Prepare the Toppings:
- In a large skillet, cook the ground beef over medium heat until browned and no longer pink, about 10 minutes. Drain off excess fat.
- Stir in the water and 1 packet of taco seasoning. Bring to a boil, then reduce heat and simmer uncovered for 5 minutes. Set aside.
-
Prepare the Sour Cream Mixture:
- In a small bowl, mix together the sour cream and the remaining packet of taco seasoning until well combined.
-
Assemble the Pizza:
- Spread the seasoned sour cream evenly over the baked crust.
- Sprinkle the cooked beef mixture evenly over the sour cream layer.
- Top with half of the shredded cheese mixture.
- In a small bowl, combine the whole kernel corn, black beans, and salsa. Spoon this mixture evenly over the pizza.
- Sprinkle the remaining shredded cheese evenly over the top.
-
Broil the Pizza:
- Preheat the broiler.
- Place the pizza 5-6 inches away from the broiler and broil for 5-10 minutes, or until the cheeses are melted and bubbly. Keep a close watch to prevent burning.
-
Serve:
- Remove from the oven and let cool slightly before slicing into 12-15 pieces.
- Serve warm and enjoy your Southwestern Pizza!
