Southwestern Pizza Recipe

Ingredients:

  • 1 1/4 cups all-purpose flour
  • 3/4 cup cornmeal
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 egg
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 pound ground beef
  • 1/2 cup water
  • 2 packages taco seasoning, divided
  • 1 cup sour cream
  • 1 cup whole kernel corn
  • 1 cup black beans, rinsed and drained
  • 1 cup salsa

Instructions:

  1. Prepare the Crust:

    • In a large bowl, combine the all-purpose flour, cornmeal, sugar, baking powder, cayenne pepper, chili powder, and salt.
    • In a separate bowl, whisk together the milk, and egg. Stir the wet ingredients into the dry ingredients until just combined.
    • Stir in the shredded cheddar and Monterey Jack cheeses.
    • Spread the mixture into a greased 15 x 10 x 1 inch baking pan.
  2. Bake the Crust:

    • Preheat the oven to 400°F (200°C).
    • Bake the crust for 10-12 minutes, or until a toothpick inserted into the center comes out clean.
  3. Prepare the Toppings:

    • In a large skillet, cook the ground beef over medium heat until browned and no longer pink, about 10 minutes. Drain off excess fat.
    • Stir in the water and 1 packet of taco seasoning. Bring to a boil, then reduce heat and simmer uncovered for 5 minutes. Set aside.
  4. Prepare the Sour Cream Mixture:

    • In a small bowl, mix together the sour cream and the remaining packet of taco seasoning until well combined.
  5. Assemble the Pizza:

    • Spread the seasoned sour cream evenly over the baked crust.
    • Sprinkle the cooked beef mixture evenly over the sour cream layer.
    • Top with half of the shredded cheese mixture.
    • In a small bowl, combine the whole kernel corn, black beans, and salsa. Spoon this mixture evenly over the pizza.
    • Sprinkle the remaining shredded cheese evenly over the top.
  6. Broil the Pizza:

    • Preheat the broiler.
    • Place the pizza 5-6 inches away from the broiler and broil for 5-10 minutes, or until the cheeses are melted and bubbly. Keep a close watch to prevent burning.
  7. Serve:

    • Remove from the oven and let cool slightly before slicing into 12-15 pieces.
