Instructions

  1. Prepare the Eggs: Begin by beating the eggs with salt and pepper in a bowl, ensuring they are well combined and seasoned to your taste.

  2. Sauté the Aromatics: Heat a cast iron skillet over medium heat and add the extra virgin olive oil. Once the oil is hot, add the thinly sliced spring onion, minced green chilli, and garlic. Sauté these ingredients until they become fragrant and soft.

  3. Cook the Spinach: Add the chopped baby spinach to the skillet and sauté for about 1 minute, until the spinach has wilted down. Once wilted, remove the mixture from the skillet and set it aside in a bowl.

  4. Sauté the Tomatoes: In the same skillet, add the halved cherry tomatoes and sauté them for a minute or until they soften slightly. This step will bring out their natural sweetness and make them tender.

  5. Combine the Ingredients: Return the sautéed spring onion, spinach, and garlic mixture back into the skillet with the tomatoes. Stir to combine all the ingredients evenly.

  6. Add the Eggs: Pour the beaten eggs over the vegetable mixture in the skillet. Allow the eggs to cook gently on low heat. Using a spoon or spatula, push the eggs from the edges toward the center, allowing uncooked egg to flow to the edges. Cook until the eggs are mostly set.
