Step 1: Preparing the Tortilla Dough
Start by preparing the dough for the tortillas. In a large mixing bowl, combine the whole wheat flour, a pinch of salt, and a tablespoon of extra virgin olive oil. Gradually add water, a little at a time, kneading as you go, until the dough comes together. It should be firm but soft to the touch. Avoid making it sticky. Once kneaded, cover the dough with a clean cloth and set it aside to rest for about 15 minutes.

Step 2: Cooking the Spinach and Corn Filling
While the dough is resting, heat a saucepan over medium heat and add a drizzle of olive oil. Toss in the chopped spinach and sweet corn. Sauté the mixture for about 2 minutes, stirring occasionally, until the spinach wilts and the water evaporates, leaving a dry filling.
