Spinach Cheese Kugel (Low Fat)

Description:

Passover is usually holiday where we tend to eat nonstop. At least with this kugel, I don’t feel so guilty.

Ingredients:

Quantity Ingredient
2 frozen chopped spinach
1 yogurt
2 low-fat cottage cheese
4 eggs
1 matzo meal (reserved 1/2 cup)
1 salt
1/2 nutmeg
1/8 pepper
1 1/2 lemon juice

Instructions:

  1. Defrost spinach.
  2. Add yogurt and low-fat cottage cheese, stir well.
  3. Add eggs, matzo meal (reserving 1/2 cup), salt, nutmeg, pepper, and lemon juice. Mix until well combined.
  4. Spread the mixture in a greased 9″ x 13″ pan.
  5. Sprinkle the reserved 1/2 cup of matzo meal over the top.
  6. Cover the pan and bake at 375°F (190°C) for 35 minutes.
  7. Uncover and bake for an additional 10 minutes, or until the top is golden brown.
  8. Serve hot and enjoy!
