Ingredients:

2 tbsp Olive oil
1 Onion
200g Potatoes
100g Spinach
1 Parsley
8 Eggs
75g Cheddar cheese

Instructions:

  1. Heat oil in a frying pan over medium heat.

  2. Add onion to the pan with a pinch of salt.

  3. Cover and sauté the onion until very soft and starting to caramelize, about 10 minutes.

  4. Add potatoes to the pan and sauté until they are soft, approximately another 10 minutes.

  5. Stir in spinach and parsley until wilted.

  6. In a separate bowl, beat the eggs and season with salt and pepper.

  7. Pour the seasoned eggs into the pan with the vegetables, then sprinkle half of the cheddar cheese on top.

  8. Cover the pan and cook over low heat until the omelette begins to set, about 15 minutes.

  9. Once the bottom is set, sprinkle the remaining cheese over the top of the omelette.

  10. Flip the omelette over in the pan, or if preferred, finish it under a low/medium grill for 5 minutes to cook the top.

  11. Allow the omelette to rest for a few minutes before turning it out onto a plate.
