Roasted Eggplant (Aubergine) Rolls Recipe

Ingredients:

2 Eggplants (aubergines)
1 Onion
1/2 Cup diced tomatoes
1 Cup reduced-fat mozzarella cheese
1/4 Teaspoon dried basil
1 Teaspoon dried oregano
1 Teaspoon garlic powder
1 Cup tomato sauce
1 Cup fat-free ricotta cheese
1 Cup spinach
Salt and pepper, to taste
Canola oil, for brushing and sautéing
Cooking spray, for baking dish

Instructions:

  1. Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).

  2. Brush 1 tablespoon of canola oil on the sliced eggplants and roast them until tender, about 15 minutes.

  3. Saute the onion in the remaining 1 tablespoon of canola oil until tender, for about 3-4 minutes.

  4. Add the diced tomatoes (with the juice) to the sautéed onion, and simmer for 15 minutes.

  5. In a separate bowl, mix together the fat-free ricotta cheese, spinach, reduced-fat mozzarella cheese, dried basil, dried oregano, and garlic powder. Season with salt and pepper to taste.

  6. Lightly coat a baking dish with cooking spray.

  7. Spoon the cheese mixture onto each slice of the roasted eggplant and roll up each slice like a jelly roll.

  8. Place the rolled eggplant in the prepared baking dish. Repeat until all the eggplant slices are used.

  9. Top the rolled eggplant with the tomato sauce.

  10. Bake in the preheated oven for 30 minutes, or until the cheese is melted and bubbly.
