  • 2 cups spinach, coarse stems removed
  • 5 zucchinis, sliced into 1/4-inch pieces
  • 2 onions, thinly sliced
  • 1/3 cup fresh basil, chopped

  • Black pepper, to taste
  • 1/4 cup olive oil
  • 1/2 cup parmesan cheese, grated

Instructions:

  1. Begin by preparing the spinach. Cut off the coarse stems and place the leaves in a colander. Rinse them thoroughly under cold water, tossing them to remove any grit. Shake off excess water and transfer the spinach to a large bowl. Set it aside.

  2. Prepare the zucchinis by trimming off the stem top and root bottom. Slice them into uniform 1/4-inch pieces and add them to the bowl with the spinach.

  3. Now, focus on the onions. Cut off the stem top and root bottom, then halve them lengthwise. Place each half flat-side down and slice them lengthwise into strips, about 1/4-inch wide. Then, holding the strips together, slice the onions crosswise into 1/4-inch pieces. Add them to the bowl.

  4. Stack the basil leaves and chop them finely with a sharp knife. Incorporate them into the bowl with the other vegetables.

  5. Using your hands, gently toss and mix the vegetables until they are well combined.

  6. Season the mixture with salt and black pepper according to your taste preferences. Mix again to ensure even distribution.

  7. Transfer the vegetable mixture into a 4-quart casserole dish, ensuring it spreads out evenly. Drizzle the olive oil evenly over the top.
