Instructions

Stir to combine and start kneading with your hands to form a dough ball. Once it comes together, leave the dough in the bowl, cover it with plastic wrap, and place it in a warm oven with only the light on to rise. Allow it to double in size, which will take about 2-3 hours. The ideal temperature for proofing is between 26°C and 30°C (80°F to 86°F).
Step 2:
While the dough is rising, prepare the filling. In a separate bowl, mix the tomato sauce with a pinch of salt and a drizzle of extra virgin olive oil. Cut the mozzarella into small cubes and drain it in a colander. Make sure the mozzarella is dry to prevent excess moisture that could soggy the dough during baking.
